Yummy Gluten Free Bread

Since taking my first Clean Eating Challenge over 2 years ago.  I eliminated bread (refined wheat) from my diet.  It was easier than I thought.  I used to have toast for breakfast and a sandwich for lunch every day.  No more!!  And I don’t miss it.

My goal is to eliminate bread from my daughters diet.  However, she loves her English muffin for breakfast.  Needless to say, it has been challenging.  I have bought some gluten free breads from the grocery store, but it has not appealed to her.

I was out shopping and found an All Purpose Gluten Free Flour.  Based on the ingredients on the label, I researched to verify the optimal levels of each ingredient.  I tested with Chocolate Chip cookies… and they were a hit.  Recipe coming soon!!  I played with a few more recipes and voila ….the best yummy gluten free bread recipe.

Ingredients:

Yeast Mixture:Yummy Gluten Free Bread

  • 1 1/2 cups of warm water
  • 2 tablespoons of raw organic honey
  • 2 1/2 teaspoons active yeast

Dry Ingredients:

  • 2 cups brown rice flour
  • 2/3 cups potato starch
  • 1/3 cup tapioca starch
  • 2 1/2 teaspoons xanthan gum
  • 4 teaspoons baking powderYummy Gluten Free Bread
  • 1 teaspoon sea salt

Wet Ingredients:

  • 2 teaspoons apple cider vinegar
  • 1/4 cup olive oil
  • 2 eggs

Directions:

NOTE:  It is best to have 3 bowls ready to mix the ingredients.

  1. Preheat over to 375°F (180°C) and line a loaf pan with parchment paper
  2. Mix the yeast mixture ingredients together, set aside until other ingredients are mixed
  3. Mix all dry ingredients together in a seperate bowl
  4. Mix all wet ingredients together in another bowl
  5. Add the yeast mixture with the wet mixture and stir until combined
  6. Add the wet mixtures to the dry ingredients
  7. Stir for several minutes, until well combined (see picture)
  8. Bake for up to 1 hour or an internal temperature of 200-205°F
  9. Remove bread from pan and cool completely before slicing and toasting

My daughter enjoys this bread toasted!  I’ve even enjoyed a slice or 2 with her as well.
