These are so goooood!  You would never know they were made with Sweet Potatoes!

Sweet Potato Pecan Muffins

My sister found a recipe online and she asked me if I could “clean it up”.  I was intrigued… so I decided to give it a try.  These Sweet Potato Pecan Muffins are free of refined sugar, gluten free, and taste great too!!

Ingredients:Sweet Potato Pecan Muffins

  • 2 cups baked sweet potatoes
  • 1/2 cup cane sugar
  • 1/3 cup water
  • 1/3 cup coconut oil
  • 2 eggs
  • 1 cup brown rice flour
  • 1/3 cup potato starch
  • 2.5 Tbsp tapioca starchSweet Potato Pecan Muffin
  • 1/2 tsp xanthan gum
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/2 cup chopped pecans

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Line muffin tin with baking cups.
  3. In a large mixing bowl, mash sweet potatoes.
  4. Add cane sugar, water, oil, and eggs to mashed sweet potatoes and mix well.
  5. Add dry ingredients and mix well.
  6. Stir in chopped pecans.
  7. Pour evenly into baking cups. Bake for 20 minutes or until toothpick inserted into centre comes out clean.
