Sweet Potato Pecan Muffins
These are so goooood! You would never know they were made with Sweet Potatoes!
My sister found a recipe online and she asked me if I could “clean it up”. I was intrigued… so I decided to give it a try. These Sweet Potato Pecan Muffins are free of refined sugar, gluten free, and taste great too!!
Ingredients:
- 2 cups baked sweet potatoes
- 1/2 cup cane sugar
- 1/3 cup water
- 1/3 cup coconut oil
- 2 eggs
- 1 cup brown rice flour
- 1/3 cup potato starch
- 2.5 Tbsp tapioca starch
- 1/2 tsp xanthan gum
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- 1/2 cup chopped pecans
Directions:
- Preheat oven to 350 degrees.
- Line muffin tin with baking cups.
- In a large mixing bowl, mash sweet potatoes.
- Add cane sugar, water, oil, and eggs to mashed sweet potatoes and mix well.
- Add dry ingredients and mix well.
- Stir in chopped pecans.
- Pour evenly into baking cups. Bake for 20 minutes or until toothpick inserted into centre comes out clean.
