Ingredients:
- 6 Medium sweet potatoes
- 1/2 cup olive oil, divided
- salt and pepper to taste
- 1 teaspoon ground cumin
- 1 teaspoon chilli powder
Directions:
Preheat over to 425 F
- Scrub potatoes, cut in half and lengthwise into slices
- Place in a bowl and toss with oil and spices until well coated
- Place potatoes on a baking sheet, drizzle with excess olive oil and spices from bowl and roast for 25 mins.
- Remove from oven and turn potatoes with a spatula
- Roast for another 25 minutes or until potatoes are tender, browned and slightly crispy
