Curry Chicken Salad in Lettuce Wrap


  • 2 chicken breasts (thighs work too)
  • 1 green apple, chopped
  • 1/3 cup coconut cream
  • splash of apple cider vinegar
  • 3 teaspoons curry powder
  • 1/4 small onion, chopped
  • salt and pepper to taste
  • Lettuce leaves to wrap
  • sprouts (optional)


  1. Poach or grill the chicken breasts, when cool chop and set aside
  2. Mix the coconut cream, vinegar and curry powder until well blended
  3. In a large bowl combine the chicken, apple, onions and curry sauce
  4. Season with salt and pepper
  5. Serve a scoop or two in lettuce leaves
  6. Top with sprouts
