Ingredients:
- 2 chicken breasts (thighs work too)
- 1 green apple, chopped
- 1/3 cup coconut cream
- splash of apple cider vinegar
- 3 teaspoons curry powder
- 1/4 small onion, chopped
- salt and pepper to taste
- Lettuce leaves to wrap
- sprouts (optional)
Directions:
- Poach or grill the chicken breasts, when cool chop and set aside
- Mix the coconut cream, vinegar and curry powder until well blended
- In a large bowl combine the chicken, apple, onions and curry sauce
- Season with salt and pepper
- Serve a scoop or two in lettuce leaves
- Top with sprouts
