Best Gluten Free Banana Bread

I have been looking for a gluten free banana bread that was simple to make and did not require ingredients I would never use again.   I found this one on the Food Matter website and thought I would give it a try.  Love it!!

Best Gluten Free Banana Bread


Recipe from:  Food Matters


  • 3 medium overripe bananas ( approx. 1 1/2 cups)
  • 1 tsp vanilla extract
  • 1 egg   (Vegan option, see below)
  • 3 tbsp coconut oil, melted
  • 1/4 cup maple syrup
  • 3 tsp baking powder
  • 3/4 tsp sea salt
  • 1/2 tsp ground cinnamon
  • ¼ tsp nutmeg
  • 3/4 cup almond milk
  • 1 1/4 cup almond flour
  • 1 1/4 cup brown rice flour


  1. Preheat oven to 350°F (180°C) and line a loaf pan with parchment paper.
  2. Mash bananas in a large bowl with a fork.
  3. Add to the large bowl, all wet ingredients (vanilla, coconut oil, egg, maple syrup and almond milk) and whisk vigorously to combine.
  4. Add baking powder, sea salt, spices, almond flour, brown rice flour and stir.
  5. Pour banana bread mixture into prepared loaf pan.
  6. Bake for 45 – 60 minutes. When ready, it should feel firm to touch and golden brown on top.  A toothpick inserted into the middle should come out clean.

Vegan Option:

Replace the egg with:

  • 1 tbsp flaxseed meal (ground raw flaxseed)
  • 2 1/2 tbsp water

Add flaxseed meal and water to a dish and stir. Let rest for 5 minutes to thicken.  Add to wet ingredients, step 3 above.
